Leah's Fish Fry!

  1. Beat eggs in a medium bowl
  2. Mix flour, cornmeal, and seasonings in a pie tin.
  3. Put your panko crumbs in another pie tin.
  4. Dredge fish filets in the flour mixture, then dip in egg, and then the panko crumbs, pressing the pankos onto the fish to stick.
  5. Pour enough vegetable oil in a large heavy pan, about 2" deep.
  6. Heat to 350.
  7. Working in batches, cook fish filets in the hot oil, turning halfway until cooked.
  8. Serve hot with tartar sauce.
  9. Delicious!
  10. My fav tartar sauce - 1 1/2 cup of real mayonnaise, 1/2 cup of finely diced dill pickles, 1/2 teaspoon dry mustard, 1 tablespoon of lemon juice, and 1 tablespoon of finely minced onion.
