Whole Wheat Batter Bread
- 1 1/4 c. warm water (105~ to 115~)
- 1 pkg. active dry yeast
- 2 Tbsp. brown sugar
- 1 c. whole wheat flour
- 2 c. white flour
- 2 tsp. salt
- 2 Tbsp. soft shortening
- In large bowl dissolve yeast in 1/4 cup water.
- Add 1 cup water.
- Add brown sugar, 1/2 cup wheat flour, 1 cup white flour, the salt and shortening.
- Beat 2 minutes with electric mixer.
- With spoon, beat in the other 1/2 cup wheat flour and 1 cup white flour. Scrape batter from sides and bottom of bowl with spatula.
- Cover with towel and set in warm place (85u0b0) to rise until double (about 30 minutes).
- Grease loaf pan.
- Stir down batter.
- Pour into loaf pan.
- Smooth top with floured hand.
- Cover and let rise again. Bake at 375u0b0 for 40 to 50 minutes.
