Royal Rib Eye Roast Recipe
- 1/4 c. prepared mustard
- 2 teaspoon garlic salt
- 1/2 teaspoon pepper
- 1 (4 lb.) beef rib eye roast
- In small bowl, stir first 3 ingredients till smooth.
- Place rib eye roast, fat side up, on small rack in open roasting pan.
- Spread top of roast with mustard mix.
- Insert meat thermometer into center of roast.
- Roast meat in 350 degree oven about 1 hour and 20 min or possibly till thermometer reaches 140 degrees for rare or possibly till desired doneness.
- Partly cooked potatoes can be arranged in roast drippings to finish cooking and brown.
