Pina Colada Cupcakes
- 1 pkg. (2-layer size) yellow cake mix
- 1 can (19 fl oz/540 mL) crushed pineapple in juice, undrained
- 1 can (14 fl oz/398 mL) cream of coconut
- 3 eggs
- 1 tub (1 L) Cool Whip Whipped Topping, thawed
- 1/2 cup sweetened flaked coconut
- Heat oven to 350F.
- Beat first 4 ingredients with mixer until blended; spoon into 24 paper-lined muffin cups.
- Bake 20 to 25 min.
- or until toothpick inserted in centres comes out clean.
- Cool cupcakes in pans 10 min.
- Remove from pans to wire racks; cool completely.
- Frost cupcakes with Cool Whip.
- Garnish with coconut.
