Beef Stroganoff
- 1 lb lean beef, cut into bite-sized pieces
- 1 teaspoon butter
- 2 cups fresh sliced mushrooms
- 12 cup chopped onion
- 1 cup nonfat beef broth
- 2 tablespoons ketchup
- 1 garlic clove, minced
- 2 tablespoons cornstarch
- 1 cup fat free sour cream
- Saute the mushrooms, onions and garlic in butter.
- My son won't eat onions, so I process them and the garlic in the food processer first.
- He can't tell the difference.
- Add the beef and ketchup.
- Make a slurry with the beef broth and cornstarch, then add to beef mixture.
- Cook until thickened, then add the sour cream.
- Serve over noodles, potatoes or rice.
