Italian Chicken Over Rice
- 4 boneless, skinless chicken breasts
- 2 Spanish onions
- 1 large green pepper
- 1 lb. fresh mushrooms
- 2 fresh ripe tomatoes
- 1 (16 oz.) bottle Viva Italian dressing
- 2 Tbsp. cayenne pepper
- fresh grated Parmesan cheese
- While your rice is cooking, turn on your oven broiler.
- Chop up onions and green pepper and mix with 1/2 bottle Italian dressing.
- Pour into baking pan and place under broiler.
- Cut up chicken into bite size pieces and wash and slice mushrooms.
- Add chicken to pan with onions and green pepper and pour in rest of dressing.
- Broil about 8 minutes.
- Add mushrooms and cayenne pepper; broil about 5 minutes.
- Add tomatoes; stir well to coat and broil 5 minutes.
- Serve over cooked rice; sprinkle with fresh Parmesan cheese.
