Blueberry Applesauce Muffins
- 3 cup Muffin mix
- 2 tbsp Brown sugar
- 1 tsp Ground cinnamon
- 1 cup Milk
- 2 Eggs
- 1/4 cup Applesauce
- 1 tsp Vanilla extract
- 1 1/4 cup Fresh or frozen blueberries
- In a large bowl, combine the muffin mix, brown sugar and cinnamon.
- In another bowl, mix the milk, eggs, applesauce and vanilla.
- Stir into dry ingredients until well mixed.
- Fold in blueberries.
- Fill greased or paper-lined muffin cups about 2/3 to 3/4 full.
- Bake at 425 for 15-18 minutes or until toothpick inserted in the muffin comes out clean.
- Cool in pan 5 minutes before removing.
- Makes about 14-16 muffins.
