Waikiki Meatballs
- 1 12 lbs ground beef
- 23 cup cracker crumb (saltines)
- 13 cup onion, minced
- 1 egg
- 1 12 teaspoons salt
- 14 teaspoon ginger
- 14 cup milk
- 2 tablespoons cornstarch
- 12 cup brown sugar, packed
- 1 (13 1/2 ounce) can pineapple tidbits, drained-reserve syrup
- 13 cup vinegar
- 1 tablespoon soy sauce
- 13 cup green pepper, chopped
- 12 teaspoon garlic powder
- butter or cooking spray
- Mix thoroughly the beef, cracker crumbs, onion, egg, salt, ginger, & milk and garlic powder.
- Shape mixture by rounded tablespoonfuls into balls.
- Melt butter in skillet (or spray cooking spray onto skillet) brown and cook meatballs, remove meatballs; keep warm.
- Drain the fat from the skillet.
- Mix cornstarch and sugar.
- Stir in reserved pineapple syrup, vinegar and soy sauce - mixing until smooth.
- Pour the liquid into the skillet andcook over medium heat, stirring constantly, until the mixture thickens and boils.
- Boil and stir 1 minute.
- Add meatballs, pineapple and green pepper into skillet.
