Cherry Chocolate Chip Almond Cookies
- 2 cup all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, at room temperature
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 cup dark chocolate cherry filled chocolate chips A photo of the cherry chocolate chips is in direction step 6
- 1 cup chocolate covered almonds, A photo of the chocolate almonds I used is in direction step 6
- Preheat oven to 325.
- Line baking sheets with parchment paper.
- In a medium bowl whisk flour, baking soda and salt.
- Set aside
- In a large owl beat butter with both sugars until light as fluffy, about 2 to 3 minutes
- Add egg, egg yolk and vanilla and beat in.
- Add flour mixture and stir in until blended do not overmix
- Fold in cherry chocolate chips and chocolate almonds.
- Roll dough into 1 inch balls, place 2 inches apart on prepared pan.
- Flatten balls lightly with the palm of your hand.
- Bake for 10 to 12 minutes just until light golden.
- Don't overbake for chewy cookies.
- Cool 1 minute on cookie sheet then cool on wire racks.
- NOTE; these cookies freeze really well!
