Coconut-Ginger Tilapia
- 4 tilapia fillets
- 1 teaspoon salt
- 12 teaspoon pepper
- 1 shallot, finely chopped
- 1 piece ginger, 1 inch, peeled and grated
- 1 lemon, zest of
- 1 cup coconut milk
- 4 small red potatoes, quartered and sliced into 1/4 -inch pieces
- 12 lb snow peas
- Preheat oven to 350F Place the fillets on double layers of parchment paper or aluminum foil.
- Divide the remaining ingredients equally over the fillets.
- Roll up packages tightly, place on baking sheet and bake 25 minutes.
