Elegant Broccoli
- 3 cups water
- 14 cup butter, plus
- 6 tablespoons butter (divided)
- 2 (6 ounce) packagescorn bread stuffing mix
- 2 (10 ounce) packages frozen broccoli spears (cooked and drained)
- 2 tablespoons flour
- 12 teaspoon chicken bouillon granule
- 14 teaspoon salt
- 1 13 cups milk
- 1 (3 ounce) package cream cheese (softened and cubed)
- 2 green onions (scallions, sliced)
- 12 cup shredded cheddar cheese
- 18 teaspoon paprika
- In a saucepan over medium heat, combine the water and 1/4 cup butter; bring to a boil.
- Remove from heat and add the stuffing mix and toss; let stand for 15 minutes.
- Spoon stuffing around edges of a greased 9 x 13 casserole baking dish.
- Place broccoli spears in the middle of the dish.
- In a saucepan over medium heat, melt remaining butter.
- Add flour, bouillon, and salt; stir to form a smooth paste.
- Gradually add milk, stirring constantly till thickened.
- Add cream cheese; stir till melted.
- Add onions and mix well.
- Pour over center of broccoli.
- Cover and bake at 350 degrees for 20-25 minutes.
- Sprinkle with cheese and paprika.
