White Layer Cake
- 1 1/2 c. white sugar
- 2 1/2 c. cake flour, sifted
- 1/2 tsp. salt
- 3 tsp. baking powder
- 1 c. water or milk
- 1/2 c. melted butter
- 1 tsp. vanilla
- 1 tsp. lemon extract
- 5 egg whites
- 1/4 tsp. salt
- 1/4 tsp. cream of tarter
- Measure the first 4 ingredients.
- Pour these dry ingredients together and sift the mixture six times.
- In a mixing bowl put the melted butter, water or milk and flavoring.
- Add 1/4 tsp. salt and cream of tarter to the egg whites and beat mixture until stiff. Sift dry ingredients into the butter mixture and beat until well blended, then fold the beaten egg whites into the flour and butter mixture.
- Turn into three greased pans measuring 7-inch or into two 9-inch pans.
- Bake at 375u0b0 for 30-35 minutes.
