Cheesy Pancake Salsa Chicken
- 23 cups Bisquick Mix
- 2 Tablespoons Water
- 1 whole Egg
- 1- 1/2 cup Shredded Colby Monterey Jack Cheese, Divided
- 3 whole Boneless Skinless Chicken Breast Halves Cut Into Half-Inch Pieces
- 2 teaspoons Vegetable Oil
- 1- 1/4 cup Salsa
- Preheat oven to 400 degrees.
- Spray an 8 square pan with cooking spray.
- Mix the Bisquick, water, and egg in bowl.
- Spread the mixture in the pan.
- Sprinkle 1 1/4 cups of the cheese over the mixture in the pan.
- Set aside.
- Cook and stir the chicken in the oil in a stove top pan over medium high heat, until the chicken is no longer pink.
- Drain off the remaining oil.
- Place the pan back on the stove and stir in the salsa, stirring the chicken and salsa together until the salsa is heated.
- Spoon the chicken salsa mixture on top of the batter in the 8-inch pan you put together earlier, leave a 1/4-inch border of batter around the edges.
- Bake for 23 minutes or until the edges are dark golden brown.
- Sprinkle with remaining cheese and put it back in the oven until the cheese melts.
- Loosen from the sides of the pan and serve.
