Bacon-Beet Potato Patties

  1. In 12-inch nonstick skillet, cook 3 strips bacon on medium 8 minutes or until crisp.
  2. Drain on paper towels and crumble; keep fat in pan.
  3. In large microwave-safe bowl, cover 2 medium red potatoes with vented plastic wrap.
  4. Microwave on high 6 minutes or until tender.
  5. Uncover, and mash.
  6. Stir in bacon; beets, finely chopped; and 1/4 teaspoon each salt and pepper.
  7. Form into 4 patties.
  8. Cook in skillet on medium 9 minutes or until crisp and golden brown, turning over once.
