Bacon-Beet Potato Patties
- 1 package red beets
- 3 strip bacon
- 2 medium red potatoes
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- In 12-inch nonstick skillet, cook 3 strips bacon on medium 8 minutes or until crisp.
- Drain on paper towels and crumble; keep fat in pan.
- In large microwave-safe bowl, cover 2 medium red potatoes with vented plastic wrap.
- Microwave on high 6 minutes or until tender.
- Uncover, and mash.
- Stir in bacon; beets, finely chopped; and 1/4 teaspoon each salt and pepper.
- Form into 4 patties.
- Cook in skillet on medium 9 minutes or until crisp and golden brown, turning over once.
