Layer Salad
- 2 c sliced carrots
- 1 medium head iceberg lettuce, shredded
- salt and pepper
- 1 c. celery, sliced
- 1 (10 oz.) pkg. frozen peas, cooked and chilled
- 1/2 c. chopped Bermuda onion
- 2/3 c. pimento stuffed olives
- 1 lb. bacon, crisp cooked and crumbled
- 1 recipe Blender Mayonnaise
- 1 tsp. sugar
- Cook carrots in a small amount of boiling salted water until tender-crisp; drain.
- Chill in refrigerator.
- Place lettuce in large glass bowl.
- Season with salt and pepper.
- Layer carrots, celery, peas, onion, olives and bacon over lettuce.
- Spread 1 cup Blender Mayonnaise over top.
- Sprinkle with sugar if desired. Garnish with parsley and additional olives.
- Serve with remaining mayonnaise.
- Can use 1 cup mayonnaise with 1/4 cup milk and 3 teaspoons sugar.
- Mix and pour on top instead of Blender Mayonnaise.
