Easy Shira-ae (Spinach with Mashed Tofu)
- 1/2 block Firm tofu
- 1/2 bunch Spinach
- 30 grams each Carrots, shimeji mushrooms (optional)
- 1 tbsp Sugar
- 1 tbsp Usukuchi soy sauce
- 1 and 1/2 tablespoon Ground sesame seeds
- Put the tofu in a colander and drain, or wrap in a cheese cloth and squeeze, but be careful not to squeeze to the point where it gets crumbly.
- Blanch the spinach, chill in water, cut into 3 cm lengths, then drain excess water.
- Chop the carrot into thin match sticks, and chop any of the large shimeji mushrooms into halves.
- Wrap in plastic wrap separately and microwave.
- Drain excess water.
- Roughly mash the tofu, add the ingredients, add the vegetables, toss until, and serve.
- In the spring, try with nanohana.
- I tossed in corn kernels as well.
