Blushing Peach Melba Dessert

  1. Mix dry gelatin mix, apple juice and water in Dutch oven.
  2. Bring to boil on medium-high heat.
  3. Cook until gelatin is completely dissolved, stirring frequently.
  4. Add peaches; cover pan with lid.
  5. Reduce heat to medium-low; simmer 15 to 20 min.
  6. or just until peaches are tender.
  7. Remove peaches from liquid; discard liquid.
  8. Serve peaches warm or cover and refrigerate until ready to serve.
  9. Top with the raspberries and whipped topping.
