Cooking for One- Mexican Salsa Chicken Dinner
- 4 ounces boneless skinless chicken breasts
- 2 tablespoons Italian dressing
- 12 cup salsa
- 14 cup 2% Mexican blend cheese
- 12 cup cooked brown rice
- 2 cups raw spinach
- 1 dash garlic salt
- slice chicken breast in half and place on baking dish.
- spoon italian dressing over chicken.
- bake in oven at 375 for 25-30 min, flip over halfway.
- cover chicken with salsa and sprinkle with cheese.
- change oven to broil and broil for 2-5 min, watch carefully so cheese doesn't burn.
- meanwhile microwave spinach on high for 2-3 min, sprinkle with garlic salt.
- place chicken on top of rice and spinach.
- enjoy!
