Beef And Vegetable Tortilla Casserole
- 1 lb. ground beef
- 1 medium onion
- 1 garlic clove, minced
- 1 1/2 tsp. chili powder
- 1 (16 oz.) can tomatoes
- 1 (15 oz.) can red kidney beans, drained
- 1 (16 oz.) can corn, drained
- 1 tsp. oregano
- 1/2 tsp. salt
- 3 or 4 flour tortillas
- Monterey Jack or Cheddar cheese
- In a 12-inch skillet on high heat, brown meat, onion and garlic.
- Add chili powder and cook 1 minute.
- Add tomatoes and juice, corn, kidney beans, oregano and salt.
- Bring to a boil on high heat, then simmer for 10 minutes on reduced heat.
- Put mixture into a 1 1/2-quart casserole dish.
- Cut tortillas in 1-inch strips and lay on top of beef mixture.
- Sprinkle with grated cheese. Bake, uncovered, for 20 minutes at 350u0b0.
