Thai-Flavoured Prawn Salad (21 Day Wonder Diet: Day 14)
- 34 cup brown rice
- 250 g small shrimp, cook and peeled
- 1 small carrot, grated coarsely
- 3 green onions, chopped finely
- 2 tablespoons coriander, chopped coarsely
- 1 garlic clove, crushed
- 1 teaspoon lime rind, finely grated
- 14 cup lime juice
- 1 small red Thai chile, chopped finely
- Cook rice in large saucepan of boiling water, uncovered, until tender, drain, cool.
- Combine rice in large bowl with remaining ingredients.
