Baked Polenta or Grits

  1. Preheat the oven to 375 degrees F.
  2. Whisk cornmeal into water, and cook until thickened, about 5 minutes.
  3. Add corn, pepper, cheese, butter, and salt.
  4. Butter a 7 by 7-inch baking dish.
  5. Pour polenta into baking dish and bake 45 minutes.
  6. Turn on broiler and broil until bubbly, 2 to 3 minutes.
