Pineapple Nut Bread
- 2 c. sifted flour
- 1/2 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. raisins
- 1/2 c. walnuts, chopped coarsely
- 1 egg, beaten
- 1 tsp. vanilla
- 2 Tbsp. melted shortening
- 1 No. 1 (1 c.) crushed pineapple, not drained
- 1 tsp. soda
- Combine flour, sugar, baking powder and salt and sift into large bowl.
- Add raisins and walnuts to the sifted dry ingredients. Combine beaten egg, vanilla and melted shortening and add to the flour mixture.
- Dissolve soda in the undrained crushed pineapple and add to flour mixture.
- Stir just until blended.
- Pour the batter into a greased 8 x 4 x 4-inch loaf pan.
- Bake at 350u0b0 for 1 hour or until done.
- Cool bread on a wire rack.
- Slice and serve. Spread with butter, oleo or cream cheese.
- Yields 1 loaf.
