Pineapple Nut Bread

  1. Combine flour, sugar, baking powder and salt and sift into large bowl.
  2. Add raisins and walnuts to the sifted dry ingredients. Combine beaten egg, vanilla and melted shortening and add to the flour mixture.
  3. Dissolve soda in the undrained crushed pineapple and add to flour mixture.
  4. Stir just until blended.
  5. Pour the batter into a greased 8 x 4 x 4-inch loaf pan.
  6. Bake at 350u0b0 for 1 hour or until done.
  7. Cool bread on a wire rack.
  8. Slice and serve. Spread with butter, oleo or cream cheese.
  9. Yields 1 loaf.
