Crockpot Banana Bread Recipe

  1. Sift together the flour, baking pwdr, baking soda and salt.
  2. With the electric beater on low, fluff the shortening in a small bowl, till soft and creamy.
  3. Add in the sugar gradually.
  4. Beat in the Large eggs slowly.
  5. With a fork, beat in 1/3 of the flour mix, 1/2 the bananas another 1/3 of the flour mix, the rest of the bananas then the last of the flour mix.
  6. Mix in the walnuts.
  7. Turn into a greased and floured baking unit or possibly a 2 1/2 qt mold or possibly 2 lb.
  8. metal coffee can and cover.
  9. Place on a rack in the slow cooker.
  10. Cover the cooker, but prop the lid open with a twist of foil to let the excess steam excape.
  11. Cook on high for 4 to 6 hrs.
  12. (Older Crockpots with plastic covers hac vents in the past!)
  13. Cold on a rack for 10 min.
  14. Serve Hot.
  15. Makes 4 to 6 servings.
