Baked Fish Chowder
- 2 lb. haddock or cod
- 2 large baking potatoes, scrubbed and diced
- 1 clove garlic, chopped
- 1 stalk celery (with leaves), chopped
- 3 onions, sliced
- 1/2 c. dry white wine
- 1/4 tsp. pepper
- 1/2 tsp. dill seed
- 2 1/2 tsp. salt
- 4 whole cloves
- 1 bay leaves
- 4 Tbsp. butter
- 2 c. boiling water
- 2 c. light cream, warmed
- Preheat oven to 350u0b0.
- Arrange clean fish in bottom of deep casserole.
- Add potatoes, vegetables and seasonings.
- Pour wine over top.
- Cut butter into bits and scatter on top.
- Pour boiling water over all and cover tightly.
- Bake 1 hour.
- Add warm cream and stir gently.
- Serve from casserole.
