Arroz Con Gandules Recipe
- 1/2 lb Dry pigeon peas
- 4 slc Bacon, crisp, minced
- 1/2 c. Onion, minced
- 1/2 c. Green pepper, diced
- 4 clv garlic, finely chopped
- 1 med Ham hocks
- 1 pkt Sazon seasoning
- 1/2 c. Tomato sauce
- 1 Tbsp. Salt
- 1/2 tsp Grnd black pepper
- 2 c. Rice
- Soak beans and drain.
- combine 7 c. water and beans in a 6 to 8 qt pot.
- Cook bacon in skillet till crisp.
- Drain bacon drippings, leaving about 1 Tbsp.
- in pan and cook onion, pepper and garlic till tender.
- Stir mix into beans in pot.
- Add in ham hock.
- Bring to boil.
- Reduce heat, cover and simmer till beans are tender.
- Add in more water if necessary.
- (There should be about 4 c. of liquid at this point.)
- Add in remaining ingredients.
- Bring to boil.
- Reduce heat and simmer covered 20 to 25 min or possibly till rice is tender.
- serves 8.
