Sourdough English Muffins
- 1 tbsp butter
- 1 cup milk
- 1 tbsp sugar
- 1 envelope yeast
- 1 pinch sugar
- 1/3 cup warm water
- 1 cup A-P flour
- 1 cup bread flour
- 1/2 tsp salt
- In a saucepan add milk, butter, 1 tbsp sugar.
- Bring to light simmer.
- Cool this mixture to 120' or less
- In small bowl.
- Mix yeast, sugar & warm water.
- Set aside for 10 minutes until foamy
- Add yeast to milk mixture
- In large bowl add the 2 cups flour, salt and milk & yeast mixture
- Stir until combined.
- Cover with Saran wrap & towel and set aside Overnight
- The next morning form dough into 6 equal patties
- Dip each side of muffin in corn meal.
- Place on griddle.
- let rest for 30 minutes
- heat griddle to 300'
- brown 5-6 minutes each side
- cool completely on rack
- split with fork.
- toast.
- add butter & jam or whatever you like
butter, milk, sugar, yeast, sugar, water, ap flour, bread flour, salt
