Sourdough English Muffins

  1. In a saucepan add milk, butter, 1 tbsp sugar.
  2. Bring to light simmer.
  3. Cool this mixture to 120' or less
  4. In small bowl.
  5. Mix yeast, sugar & warm water.
  6. Set aside for 10 minutes until foamy
  7. Add yeast to milk mixture
  8. In large bowl add the 2 cups flour, salt and milk & yeast mixture
  9. Stir until combined.
  10. Cover with Saran wrap & towel and set aside Overnight
  11. The next morning form dough into 6 equal patties
  12. Dip each side of muffin in corn meal.
  13. Place on griddle.
  14. let rest for 30 minutes
  15. heat griddle to 300'
  16. brown 5-6 minutes each side
  17. cool completely on rack
  18. split with fork.
  19. toast.
  20. add butter & jam or whatever you like
