Oat Bran Muffins

  1. In a
  2. small bowl, stir together the sour cream and baking soda; set aside.
  3. Cream butter with sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
  4. Beat in sour cream mixture.
  5. Stir in remaining ingredients until dry ingredients are just blended.
  6. Do not overmix.
  7. Divide mixture between 3 mini loaf pans (6 x 5 x 2-inch) and bake in a 350u0b0 oven for 40 minutes or until toothpick inserted comes out clean.
  8. Allow to cool in pans 15 minutes and then remove from pans and continue cooling on a rack.
  9. Yields 3 mini loaves.
