Butter and Olive Oil-Basted California Halibut
- 8 oz. California halibut filet (or other thin white fish filet)
- 1/2 tsp. salt
- 1/4 tsp. Black pepper
- Juice and zest of 1 lemon
- 1 tbsp. butter
- 1 tbsp. Extra virgin olive oil
- 1/2 tsp. seedless chili flakes
- Season fish filets with salt and pepper and set aside.
- Heat a 10 to 12 inch saute pan over medium heat (slightly on the low side of medium) for 4 minutes to get warm.
- Add the butter, olive oil, lemon zest and juice and the chili flakes to the pan.
- When the butter is melted add the fish filets and cook about 4 minutes per side, or until the fish feels flaky when you gently push your finger against it.
- Larger filets will take longer and may need about 5 minutes of oven time at 450 degrees.
- Thin filets (1 inch or less) will easily finish on the stove top.
- Place the fish on the serving plate and pour the remaining pan juices on top.See all recipes and cooking videos from Chef Donald Link.
