Butter and Olive Oil-Basted California Halibut

  1. Season fish filets with salt and pepper and set aside.
  2. Heat a 10 to 12 inch saute pan over medium heat (slightly on the low side of medium) for 4 minutes to get warm.
  3. Add the butter, olive oil, lemon zest and juice and the chili flakes to the pan.
  4. When the butter is melted add the fish filets and cook about 4 minutes per side, or until the fish feels flaky when you gently push your finger against it.
  5. Larger filets will take longer and may need about 5 minutes of oven time at 450 degrees.
  6. Thin filets (1 inch or less) will easily finish on the stove top.
