Savoury Seafood Chowder
- 1 Tbsp. olive oil
- 1 small onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 small clove garlic, minced
- 1 can (28 fl oz/796 mL) no-salt-added diced tomatoes, undrained
- 1/4 cup each 25%-less-sodium chicken broth and dry white wine
- 1 lb. (450 g) tilapia fillets, cut into 1-inch pieces Walmart Supercenter 1 pkg For $10.98 thru 02/14
- 1/2 lb. (225 g) bay scallops
- 1/2 lb. (225 g) uncooked deveined peeled medium shrimp Safeway 1 lb For $8.99 thru 02/09
- 3/4 cup Philadelphia Cream Cheese Product
- 2 Tbsp. chopped fresh basil
- Heat oil in large saucepan on medium-high heat.
- Add onions; cook and stir 3 to 5 min.
- or until softened, adding garlic for the last minute.
- Stir in tomatoes, broth and wine; bring just to boil.
- Add tilapia, scallops and shrimp; simmer on medium-low heat 10 min.
- or until tilapia flakes easily with fork and shrimp turn pink, stirring occasionally.
- Add cream cheese product and basil; cook and stir 2 to 3 min.
- or until cream cheese is completely melted and chowder is heated through.
