Cooked Concord Grape Jam - CERTO Crystals

  1. Slip skins from grapes.
  2. Finely chop skins; set aside.
  3. Combine grape pulp and water in saucepan.
  4. Bring to boil; cover.
  5. Simmer 5 min.
  6. Press cooked pulp through sieve to remove seeds.
  7. Combine pulp and skins.
  8. Measure exactly 6 cups prepared grapes into large saucepan.
  9. Add pectin crystals; mix well.
  10. Bring to full rolling boil on high heat.
  11. Add sugar; mix well.
  12. Return to full rolling boil; cook 1 min., stirring constantly.
  13. Remove from heat.
  14. Stir and skim foam for 5 min.
  15. to prevent fruit from floating to surface.
  16. Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
  17. Cover with lids.
  18. Let stand at room temperature 24 hours or until set.
