Elderflower cordial recipe
- 100 g (3.5oz) heads of elderflower (25 heads approx)
- 2 lemons, peelings removed, and sliced
- 1 kg (2.2lbs) sugar
- 550 ml (19.4fl oz) water
- 40 g (1.4oz) citric acid
- Heat the water and sugar together, add the citric acid and bring to the boil.
- Pour onto the Elderflower heads, the sliced lemons and the lemon peelings.
- Stir well, and cover with cling film.
- Keep refrigerated for 4 days and then strain.
- Vac pack the liquid.
- For best results, dilute with sparkling water or prosecco, lemon slices and fresh mint.
