Peach and Berry Compote

  1. Blanch and peel peaches.
  2. Cut into 1/4-inch-thick wedges.
  3. Simmer peaches, wine, and sugar in a 3-quart saucepan, stirring occasionally, 2 minutes, then remove from heat.
  4. Immediately transfer mixture to a bowl and add berries, tossing to combine.
  5. Cool compote completely.
  6. Serve compote chilled or at room temperature.
