Lentil Curry With Spinach
- 4 teaspoons canola oil
- 1 chopped onion
- 4 chopped garlic cloves
- 2 tablespoons grated fresh ginger
- 2 teaspoons curry powder
- 12 teaspoon red pepper powder
- 1 cup dried red lentils (I have used French and regular as well without trouble)
- 2 (14 ounce) cans vegetable broth
- 2 12 cups water
- 1 (10 ounce) package frozen spinach
- salt
- Saute onions in oil till translucent, stirring frequently.
- Add garlic, ginger, curry, and pepper flakes; cook stirring frequently till fragrant, about 1 minute.
- Add lentils and veggie broth and water.
- Simmer till tender, about 20 minutes.
- Add spinach and cook until heated through.
- Add salt to taste.
