Lentil Curry With Spinach

  1. Saute onions in oil till translucent, stirring frequently.
  2. Add garlic, ginger, curry, and pepper flakes; cook stirring frequently till fragrant, about 1 minute.
  3. Add lentils and veggie broth and water.
  4. Simmer till tender, about 20 minutes.
  5. Add spinach and cook until heated through.
  6. Add salt to taste.
