Black-Eyed Pea Cornbread(One Dish Meal)
- 1 lb. spicy ground pork sausage
- 1 medium onion, diced
- 1 c. white cornmeal
- 1/2 c. all-purpose flour
- 1 tsp. salt
- 1 large egg, lightly beaten
- 1 c. buttermilk
- 1/2 c. vegetable oil
- 1 (15 oz.) can black-eyed peas, drained
- 2 c. shredded Cheddar cheese
- 3/4 c. cream-style corn
- 1/4 c. jalapeno peppers, chopped
- Cook sausage and onion in large skillet. Stir until sausage is done and drain. Combine cornmeal, flour and salt. Stir together eggs, buttermilk and oil. Stir in dry ingredients until moistened; batter will not be smooth. Add sausage mixture, peas and remaining ingredients to batter, stirring well. Pour into a greased 13 x 9-inch baking dish for 1 hour or until golden brown. Preparation time: 35 minutes.
