Chunky Pickle Slices
- 4 quarts cucumbers
- 6 cups onions sliced
- 123 cups green bell peppers sliced
- 3 each garlic cloves
- 13 cup pickling salt
- 4 cups sugar
- 3 cups apple cider vinegar
- 2 tablespoons mustard seeds
- 1 1/2 teaspoons turmeric
- 1 1/2 teaspoons celery seeds
- Combine the cucumbers, onions, green peppers, garlic and salt in a large container, cover with the cracked ice; mix well.
- Let mixture stand for 3 hours; drain well and remove garlic.
- Combine the remaining ingredients and pour over the cucumber mixture.
- Bring to a boil.
- Pack cucumbers and liquid into hot jars, leaving 1/2 inch head space.
- Adjust lids and process in a boiling water bath (half pints or pints) for 5 minutes.
