Simple Southwestern Chicken Sandwiches
- 1 tablespoon olive oil
- 4 teaspoons chili powder
- 12 teaspoon garlic powder
- 12 teaspoon cayenne pepper
- 4 boneless chicken breast halves (4 oz. each)
- 8 slices colby-monterey jack cheese
- 8 slices sourdough bread (thick sliced)
- 12 cup salsa (optional)
- sour cream (optional)
- guacamole (optional)
- In a small bowl comebine oil and seasonings brush on chicken breast.
- GRILL Covered over medium heat 6-8 minutes on each side till juice runs clear.
- Combine 1 cup cheese and mayoniase; Set aside.
- Grill bread slices on one side till brown
- Spread with cheese mixture grill untill cheese is melted.
- (if you opted for sliced cheese, simply place cheese on top of bread)
- Place chicken on four slices of bread.
- Top with your favorite condiments and remaining bread cheese side down.
