Hj's Southwest Turkey Meat loaf
- 1 small eggplant
- 2 lb ground turkey
- 6 slice bacon
- 1 large egg
- 2 clove garlic
- 1 small onion
- 3/4 cup green chilis
- 1 can black beans
- 1 cup italian bread crumbs
- 1/2 cup ketchup
- cut eggplant into 1/2 inch cubes and sautee in medium sautee pan until tender.
- (healthy option use chicken broth instead of olive oil to sautee vegetables).
- dice onion and green chilies.
- mince garlic.
- pour beans into a strainer and rinse under cold water.
- preheat oven to 400
- in a large mixing bowl mix together all ingredients with the exception of the bacon.
- place half the mixture into one of two loaf baking pans and the second half into the other.
- lay three strips of bacon length wise across each loaf, or chop bacon into small bite-sized pieces and cover top of both loves, place in oven.
- bake for 1 hour or until center of loaf reaches 165F.
