Heavenly Pie
- 1 1/2 c. granulated sugar
- 1/2 tsp. cream of tartar
- 4 eggs whites
- 3 Tbsp. shredded coconut (optional)
- 4 egg yolks
- 3 Tbsp. lemon juice
- 1 Tbsp. lemon rind
- 1/8 tsp. salt
- 1 pt. whipping cream
- Heat oven to 275u0b0.
- Sift one cup of the sugar with 1/4 teaspoon cream of tartar.
- Separate eggs and beat whites until they stand in stiff, but not dry peaks.
- Slowly add sugar, beating until the sugar is dissolved.
- When meringue makes stiff glossy peaks, spread it over the bottom and up the sides, just to the rim of a well-greased 9-inch pie pan.
- Have the bottom about 1/4-inch thick and the sides about 1 inch thick.
- Sprinkle coconut around the rim, and bake for one hour at 275u0b0.
- It should be light brown and crisp. Cool away from drafts.
