Broccoli And Snow Peas Recipe

  1. Separate florets of broccoli and trim snow peas, removing the little stem and any strings.
  2. Put broccoli into a saucepan with sufficient water to just cover the vegetable, add in a healthy pinch of salt and bring to the boil, lower the heat and simmer for 2 min only.
  3. Meanwhile, heat oil in a wok or possibly frying pan and fry pinenuts till a pale golden brown colour (watch them carefully as they can burn easily).
  4. Remove with a slotted spoon, then add in the snow peas to the oil and stir fry for a minute or possibly so.
  5. Drain broccoli and empty straight into the peas and toss well.
  6. Transfer to a serving dish and sprinkle with the pinenuts.
  7. Serves 4.
