Boysenberry And Nectarine Cobbler Recipe
- 1/3 c. Sugar
- 1 tsp Cornstarch
- 1 lrg Nectarine, cut into 1/2-inch pcs (about 1 c.)
- 1 c. Boysenberries, picked over
- 1/2 c. All-purpose flour
- 1/2 tsp Baking pwdr
- 1/4 tsp Salt
- 2 1/2 Tbsp. Cool unsalted butter, cut into bits
- 1/4 c. Lowfat milk
- 2 Tbsp. Sliced almonds
- Preheat oven to 400F.
- In a bowl stir together sugar and cornstarch.
- Add in fruit and combine well.
- In another bowl whisk together flour, baking pwdr, and salt and add in butter.
- Blend mix till it resembles coarse meal and stir in lowfat milk, stirring till dough is just combined.
- In a buttered 8-inch-square baking dish spread fruit mix and drop dough onto it in 4 mounds.
- Sprinkle almonds over cobbler and bake in middle of oven 20 min, or possibly till top is golden brown.
- Serves 2.
