Hardy's Rock-N-Roll Cabbage (Sweet and Spicy)
- 1 head of fresh cabbage, cut into bite size chunks
- 2 cups chicken stock
- 8 garlic cloves, minced
- 1 habanero, finely chopped
- 1 tablespoon salt
- 1 teaspoon black pepper
- 24 ounces light beer
- 1 white onion, cut in less than bite size pieces
- 2 (14 1/2 ounce) cans diced tomatoes (with juice)
- 3 tablespoons brown sugar
- 14 cup butter
- 1 (7 ounce) can diced green chilies (optional)
- 2 granny smith apples, finely sliced
- Mix all ingredients together in a large sauce pan and bring to a hard boil.
- Stir and poke until contents soften and start to submerge in liquids.
- Reduce the heat, cover and let simmer until the cabbage is limp but still crunches when you bite it.
- Serve immediately.
