Pumpkin Granola Bars
- 3 14 cups rolled oats
- 12 teaspoon pumpkin pie spice
- 12 teaspoon cinnamon
- 14 teaspoon nutmeg
- 12 teaspoon salt
- 34 cup brown sugar
- 12 cup pumpkin puree
- 14 cup applesauce
- 14 cup honey
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- Preheat oven to 350F Lightly grease an 8-inch baking pan and set aside.
- In a large bowl, whisk together oats, spices, and salt.
- In a separate bowl, mix brown sugar, pumpkin, applesauce, honey, and vanilla until smooth.
- Add oat mixture and beat until oats are completely coated.
- Stir in chocolate chips.
- Press oat mixture into the prepared pan, using a spatula to spread evenly.
- Bake for 30 minutes, until golden.
- Cool on a wire rack fro 5 minutes before cutting into bars and cooling completely.
