Sourdough Hotcakes Recipe

• 2 c. sourdough starter
• 2 tbsp. sugar
• 4 tbsp. vegetable oil
• 1 egg
• 1/2 teaspoon salt
• 1 scant teaspoon soda (more if needed. Soda will sweeten a very sour starter)

1. Place starter in nonmetal bowl.
2. Add in sugar, egg and oil.
3. Mix well.
4. Just before you start cooking the cakes mix the soda with 1 Tbsp.
5. hot water.
6. Fold gently into sourdough.
7. Don't BEAT.
8. Bake on warm griddle and serve on hot plates.
9. Can sprinkle a few berries of choice over each cake on griddle, then turn and finish cooking.
