Jefferson Davis Pie

  1. Place unbaked pie shell in a 9" pie pan.
  2. Trim, fold over, and flute edges.
  3. Chill fo 1 hour.
  4. Heat oven to 325 degrees.
  5. Pour water to depth of 1" into a 4 quart saucepan.
  6. Bring to simmer over medium-low heat.
  7. Whisk together sugar and salt, brown sugar, buttermilk, nutmeg, egg yolks, and egg.
  8. Set bowl over saucepan.
  9. Add butter; cook, whisking frequently, until smooth and warm, about 5 minutes.
  10. Remove from heat; let cool for 5minutes.
  11. Pour mixture into chilled pie shell.
  12. Bake until center is just set, 45-50 minutes.
  13. Transfet pie to cooling rack; let cool completely before serving, about 2 hours.
