Cheesy Italian Bacon & Egg Bake
- 1 French bread baguette (8 oz.), cut into 1-inch cubes
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 8 slices OSCAR MAYER Bacon, cooked, crumbled
- 2 cloves garlic, minced
- 1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
- 1/4 cup KRAFT Grated Parmesan Cheese
- 1 cup POLLY-O Natural Part Skim Ricotta Cheese
- 5 eggs
- 1-1/2 cups milk
- 1 tomato, chopped
- 1 Tbsp. chopped fresh basil
- 1/2 tsp. black pepper
- Heat oven to 350F.
- Spread half the bread cubes onto bottom of 13x9-inch baking dish sprayed with cooking spray.
- Top with half each of the onions, bacon, garlic, mozzarella and parmesan; cover with ricotta.
- Repeat layers of onions, bacon, garlic, mozzarella and parmesan.
- Whisk eggs and milk until blended; stir in tomatoes and seasonings.
- Pour over ingredients in baking dish.
- Press bread cubes lightly into egg mixture until completely covered.
- Let stand 10 min.
- Bake 50 min.
- to 1 hour or until center is set and top is golden brown.
