Shrimp Alfredo Bruschetta
- 8 slices Thick Sliced Good Quality Bread (I Use An Italian Herb Cheese Bread, But Any Good Bread Will Work; Texas Toast Is Great As Well)
- 4 Tablespoons Butter
- 4 cloves Garlic, Peeled And Thinly Sliced
- 2 cups Alfredo Sauce, Storebought Or Home Made
- 4 ounces, weight Blue Cheese, Crumbled
- 1/2 pounds Fresh Shrimp (3-4 Shrimp Per Toast), Peeled And Deveined
- 1/2 cups Shredded Parmesan Cheese
- Heat oven to 350 F. Place bread slices on a lined baking tray and put it in the oven to toast.
- Theres no set time on this.
- Just keep an eye on it until it gets to the level of toasting that you prefer.
- While bread is toasting, continue with other ingredients.
- Put butter in a small pot and melt over medium heat.
- When the butter is melted, add sliced garlic and stir.
- Cook garlic over medium heat for about 30 seconds, then lower the heat to as low as you can.
- The butter and garlic will slowly brown.
- When you notice the garlic turning light brown, turn off the heat and set garlic butter aside.
- Pour the Alfredo sauce into a pot and slowly bring it up to just below a simmer.
- Add blue cheese and stir through to melt.
- Once the blue cheese is melted, taste for seasoning and adjust if needed.
- Let the sauce just come up to a simmer over medium/low heat, and add your shrimp.
- The shrimp will gently poach in the sauce.
- Depending on the size of your shrimp, this will take anywhere from 3 to 8 minutes.
- Just give it a stir every couple minutes and when the shrimp are completely pink, you are ready to serve.
- Put 2 toast slices on a plate and brush them with the garlic butter.
- Top with 3 or 4 shrimp per toast and spoon some of the Alfredo sauce over it all.
- Sprinkle with Parmesan and enjoy!
- Note: Because I am an over-achiever, I make my own bread and my own Alfredo sauce.
- You dont have to.
- Seriously, this meal can come together in 15 minutes start to finish if you use ready made items.
