Chicken In Madeira Wine(By Francoise Gilbert)

  1. Rinse and pat dry the chicken.
  2. Toss with flour, salt and pepper to taste.
  3. Brown chicken in heated oil until brown. Transfer to a clean bowl.
  4. Saute thinly sliced onion and mushrooms for 2 or 3 minutes.
  5. Add wine, scraping pieces at bottom of pan. Return chicken to pan; add cream and broth (or creamer).
  6. Bring to boil; cook until thickened.
  7. Spoon chicken mixture over noodles. Sprinkle with parsley.
  8. Makes 4 servings.
