Chicken In Madeira Wine(By Francoise Gilbert)
- 1 lb. boneless chicken breasts, cut into 1/2-inch cubes
- 1 Tbsp. flour
- salt and pepper
- 2 Tbsp. vegetable oil
- 1 large onion, halved and sliced
- 1/2 lb. mushrooms, thinly sliced
- 3 Tbsp. Madeira wine
- 1/3 c. heavy cream or nondairy creamer
- 1/2 c. chicken broth
- cooked noodles
- 1 Tbsp. minced fresh parsley
- Rinse and pat dry the chicken.
- Toss with flour, salt and pepper to taste.
- Brown chicken in heated oil until brown. Transfer to a clean bowl.
- Saute thinly sliced onion and mushrooms for 2 or 3 minutes.
- Add wine, scraping pieces at bottom of pan. Return chicken to pan; add cream and broth (or creamer).
- Bring to boil; cook until thickened.
- Spoon chicken mixture over noodles. Sprinkle with parsley.
- Makes 4 servings.
