Almost Perfect Texas Red Chili
- 2 lb. meat
- 2 cloves garlic
- large chopped onion
- 15 oz. can tomato sauce
- 2 cans stewed tomatoes, diced
- 1 small can chili powder (hard to get too much)
- 2 tsp. salt
- 2 tsp. paprika
- 3 Tbsp. Worcestershire sauce
- 1 Tbsp. cumin
- 1 tsp. black pepper
- 1 tsp. red cayenne pepper (optional)
- 8 dashes Tabasco sauce (optional)
- 1/2 doz. chopped jalapenos and some of the juice (optional)
- Brown meat with garlic and onion in a large stew pot.
- Drain excess grease, then add all the ingredients.
- If serving ladies, babies, wimps or you are partial to your company, don't use the last 3 ingredients.
- Let this all simmer for about 45 minutes. Take about 1/2 cup of flour and add hot water to it, a little at a time until soupy and stir into chili.
- This "tightens" the chili and adds flavor.
- Then simmer 15 more minutes, then serve.
