Caesar Bow Ties Recipe
- 1/3 c. red wine vinegar
- 2 tsp Dijon mustard
- 1 clv garlic, chopped
- 1 x salt to taste
- 1/2 x light extra virgin olive oil grnd pepper to taste
- 1/2 lb bow tie pasta, cooked
- 8 c. mixed salad greens
- 2 c. peeled and minced cucumber
- 1 c. minced walnuts
- 1/2 c. fresh grate parm cheese
- In a small bowl, whisk together first 5 ingredients.
- Gradually add in oil, whisking constantly till slightly thickened.
- Add in pepper to taste-set aside.
- In large bowl-toss pasta w/ 3 tbsp dressing.
- Just before serving, add in greens, cucumbers, and walnuts to pasta mix.
- Again, toss w/ 4 tbsp or possibly more dressing.
- Add in salt/pepper to taste.
- Top w/ cheese and serve.
