Favorite Shoofly Pie

  1. Heat oven to 400F.
  2. Combine 1 cup flour and salt in bowl; cut in 1/3 cup butter with pastry blender or fork until mixture resembles coarse crumbs.
  3. Mix in enough water until flour is moistened.
  4. Shape into ball.
  5. Roll out dough into 12-inch circle on lightly floured surface.
  6. Fold into quarters.
  7. Place into 9 1/2-inch deep-dish pie plate; unfold, pressing firmly against bottom and sides.
  8. Crimp or flute edge.
  9. Combine hot water and 1 teaspoon baking soda in bowl.
  10. Stir in molasses.
  11. Set aside.
  12. Combine 1 cup flour and brown sugar in another bowl.
  13. Cut in 2 tablespoons butter until mixture resembles coarse crumbs.
  14. Reserve 1/2 cup crumbs.
  15. Add molasses mixture, egg and vanilla to remaining crumb mixture.
  16. Beat until well mixed.
  17. Pour mixture into prepared crust; sprinkle with the reserved crumb mixture.
  18. Bake 10 minutes.
  19. Reduce oven temperature to 350F.
  20. Bake 35-40 minutes or until filling is set.
  21. Serve warm with whipped cream, if desired.
